Siberian Sturgeon is of a long spindle shape, extending to the tail to fade off. A sexual matured fish normally has a full length of 90 – 130cm and a weight of 20 – 25kg. Large fishes can be as long as 2m and as heavy as 200kg with the longest fish of 3m.
Siberian Sturgeon can survive in waters with large amplitude of temperature and salinity. Although the proper water temperature is 15~25℃, it can suffer severe coldness and heat. During the frozen period in winter it can ingest and grow while during summer it can suffer a water temperature of 30℃ and go on living.
Siberian Sturgeon can be stocked and farmed in lakes and reservoirs. Both the northern and southern parts of China have the condition to transplant and propagate or farm Siberian Sturgeon. Considering the breeding, hatching and cultivating of Siberian Sturgeon and its fry call for a low water temperature while the adult fish can grow faster in warm water, the Amur Caviar group plans to farm and cultivate fish fry in the North and breed adult fish in the South, which is helpful to boost the growth of adult fish and stably augment the breeding scale and stock level of the fish year by year.
